COOKIE COUNTDOWN: RECIPE #11 CEREAL HOLLY WREATHS

Cereal Holly Wreaths



INGREDIENTS:

2 Cups cheerios cereal
1 cup (6 1/2 ounces) green candy melts or coating wafers
1 Tablespoon red cinnamon candies

DIRECTIONS:

Line 1 cookie sheet with foil. Place cereal in large bowl. Melt candy melts as directed on package. Pour melted candy over cereal; toss to mix.
  1. For each wreath, drop about 3 tablespoons mixture onto foil-lined cookie sheet. With fingers, shape into 3-inch wreath with 1-inch center opening. Immediately decorate with cinnamon candies. Let stand about 5 minutes or until set.

You can use children’s picture books as an Advent calendar. Every year, I individually wrap 25 Christmas books and place them in a basket near our tree. Beginning on December 1, a child picks a “present” from the basket, unwraps it, and then we read it together. Siblings take turns choosing the “present.” Sometimes we read the book at night by flashlight as we lie next to the Christmas tree. If you only have 7 books, then begin 7 days before Christmas.

Handmade Gifts

     I often check daily deals from one of my favorite blogs.  faithfulprovisions.com
She also includes recipes such as this one below.  I've also included some simple recipes to make beauty products. With Christmas coming all of these make wonderful "handmade gifts"... Just wrap up in a beautiful, reusable basket! Get the kids involved!

VANILLA CHAI TEA MIX

Ingredients

1 cup nonfat dry milk powder

1 cup powdered non-dairy creamer

1 cup French vanilla powdered non-dairy creamer

2 ½ cups white sugar

1 ½ cups unsweetened instant tea

2 tsp ground ginger

2 tsp ground cinnamon

1 tsp ground cloves

1 tsp ground cardamom

1 tsp nutmeg

1 tsp allspice

¼ tsp white pepper

Instructions
Combine all ingredients in a food processor and blend until it is a fine powder (If you have a small food processor, you can combine just the instant tea and spices in the food processor & then combine everything together in a bowl).

Add two-three tablespoons of mix to 8 ounces of hot water or milk.



Lemon Mint Shower Gel
Ingredients

2 cups liquid castile soap

1/2 cup vegetable glycerin

1/2 cup sweet almond oil

12 drops peppermint oil

12 drops lemon oil

10 drops lime oil

Instructions
1.Pour all ingredients into a glass bowl.

2.Stir gently to combine.

3.Be careful not to over stir--it will bubble.

4.Be sure to combine well, then pour into a pump bottle.



Lavendar Mint Foot Scrub
Ingredients

1 cup sea salt, finely ground

1 cup Epsom salt

1/2 cup grape seed oil

2 tablespoons dried lavender buds

6-8 drops spearmint oil

6-8 drops lavender oil

Instructions
1.Mix all ingredients until well coated.

2.Scoop into a glass jar.

3.Label and tie with raffia or ribbon to decorate.

THANKSGIVING CRAFTS

  • Large construction paper
  • Markers or crayons
  • Brown, orange, and yellow finger paints
  • Paper plates
  • Clear contact paper

HERE'S HOW
  1. Draw a turkey on a white piece of construction paper.
  2. With the help of an adult, pour the finger paint in a paper plate.
  3. Place your hand into the paint and use your handprint as the turkey's tail feathers.
  4. When the paint is dry, cover both sides of the paper with the contact paper to create an easy-to-clean placemat.
  5. Repeat steps 1 through 4 to create a placemat for each dinner guest.

Southern Apple Crumble

Filling

3 large apples, peeled, coarsely chopped (about 3 cups)

1/2 cup granulated sugar

1/4 cup packed brown sugar

1 to 2 teaspoons ground cinnamon

1/4 cup cold butter or margarine, cut into small pieces

Topping

1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix

1/2 cup butter or margarine, melted

1/2 cup chopped pecans

1. Heat oven to 300°F. Spray bottom and sides of 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, toss filling ingredients. Spread mixture in baking dish.


2. In same large bowl, stir cookie mix and melted butter until crumbly. Sprinkle over filling.

3. Bake 40 minutes. Remove from oven; sprinkle with pecans. Bake 15 to 20 minutes longer or until topping is golden brown. Serve warm or at room temperature.

Smoothie recipes

Blueberry Frozen Yogurt Smoothie

Ingredients:
1 cup blueberries, fresh or frozen
1 cup vanilla frozen yogurt
½ cup milk
Blend all ingredients together for approximately 30 seconds, or until you reach your desired consistency.
TIP: For a smoother and thinner smoothie, add an additional ½ cup of milk and blend an additional 10 seconds. Repeat this step until you reach your desired thickness

Strawberry Frozen Yogurt Smoothie

Ingredients:
1 cup vanilla frozen yogurt
1 cup fresh strawberries
Dash of cinnamon
1 cup ice
Cut up strawberries and add to blender. Add remaining ingredients to the blender and blend on high for 30 seconds, or until you’ve reached your desired consistency.

Orange-Pineapple Smoothie

1 cup orange juice
2 cups pineapple chunks packed in their own juice, drained
1 banana
1/4 cup skim milk
2 Tbsp. honey

Banana Muffins

     Found a recipe which works well to bring in for your child's "class treat".  My four year old is in a preschool class that has a child who is dairy free.  Tried it and it came out tasting really good.  I find that if I replace the butter with applesauce it can get too mushy and taste different.  BUT...... if it is a small amount, such as 1/3 a cup, it all comes together.  I found it on one of my "Go to" recipe sites http://www.allrecipes.com/

Banana Muffins II Recipe

makes 12 muffins or 48 mini

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large bananas, mashed
  • 3/4 cup white sugar
  • 1 egg
  • 1/3 cup butter, melted    REPLACE WITH 1/3 CUP APPLESAUCE IF "DAIRY FREE" VERSION IS NEEDED

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
  2. Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
  3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.

Water Activities

Check out these great ideas for waterplay! With the temps so hot, it is a fun way for the kids to COOL off!
Individual water tubs at a table make great activity centers. Begin with water only, then add playthings as children's interest wanes. Begin with spoons and shovels, then move on to sponges and measuring tools. Sand and shells are great for children to touch and explore.

Children will love to "paint" water on outdoor pavement with buckets and paint brushes. Older children may paint the letters of their names. Younger children will be content making back-and-forth strokes. Either way, a few minutes in sunlight, and watch it evaporate!

Squeeze bottles of water offer a variety of play opportunities, and help children develop eye-hand coordination. Children may look for the best way to squirt long or short distances. Or, they may create designs on the water's surface.

Assorted containers, funnels, and plastic tubes will help children learn to measure, and are key for the early development of math and science skills. Curiosity leads to experimentation: Which objects will float? Which ones hold the most liquid? Gradually, children build their vocabularies (empty/full, shallow/deep) and learn how to categorize.

*Take a portable BASKET BALL HOOP (outside of course!) and have the children toss water balloons through it! Throw from distances appropriate to children's age. Kids love throwing water balloons-period! Give them a target such as a tree or 'through the hoop'!


*Have a Toy Wash! Bring a large bucket out and fill it up with all of your plastic toys.  Great way to stay cool and clean your toys.

Get out those plastic pools and get creative!

1 package (9 oz) refrigerated cheese-filled tortellini
1 cup Green Giant® frozen sweet peas (from 1-lb bag)
5cups torn romaine lettuce
1 1/2cups julienne (matchstick-cut) carrots
2 cups chopped or strips grilled chicken
1 medium red bell pepper, cut into strips
1/2 cup reduced-fat mayonnaise or salad dressing
1/2 cup basil pesto
1/4 cup buttermilk
2 tablespoons chopped fresh parsley or basil leaves.
DIRECTIONS
1. Cook tortellini as directed on package, adding peas during last 4 minutes of cook time. Drain; rinse immediately with cold water. Pat with paper towels to remove moisture.
2. In 3- or 4-quart clear bowl, layer the lettuce, the carrots, chicken, peas, the tortellini, and bell pepper.
3. In small bowl, mix mayonnaise, pesto and buttermilk. Spread over peppers; sprinkle with parsley. Cover and refrigerate at least 2 hours until chilled or overnight. Stir just before serving.
Look for matchstick-cut carrots already cut and packaged in the produce section of the supermarket.

Set them to harden on waxed paper.

Tomato Side Dish Ideas For Father's Day

BRUSCHETTA SALAD

1/2 cup olive oil

2 tablespoon red wine vinegar

2 medium tomato , cut into 1-inch pieces (about 2 cups)

1/2 cup thinly sliced cucumber

1 medium red onion , thinly sliced (about 1/2 cup)

1/4 cup chopped fresh basil leaves

1 tablespoon drained capers

2 cup Pepperidge Farm® Whole Grain Seasoned Croutons

Directions
Beat the oil and vinegar in a large bowl with a fork or whisk. Add the tomatoes, cucumbers, onion, basil and capers and toss to coat.

Add the croutons just before serving and toss to coat. Serve immediately.

Tip: It's important to serve this salad immediately so that the croutons will stay crisp.

HERB GRILLED TOMATOES

3 tablespoons dairy sour cream or plain yogurt

1 tablespoon snipped fresh basil or 1 teaspoon dried basil, crushed

Fresh basil (optional)

Directions
Remove cores from tomatoes and cut tomatoes in half crosswise. Spread cut side of each tomato with sour cream or yogurt. Sprinkle each with basil. Sprinkle bread crumbs and Parmesan cheese on tomatoes. Arrange tomato halves in a foil pie pan.

Arrange preheated coals around a drip pan in a covered grill. Test for medium heat above the pan. Place the foil pan containing tomatoes on grill over drip pan. Cover and grill for 10 to 15 minutes or until tomatoes are heated through. Garnish with fresh basil, if desired. Makes 4 servings.

Herb-Grilled Roma Tomatoes: Prepare as directed above except substitute 4 Roma tomatoes for the small tomatoes. Do not core roma tomatoes. Cut lengthwise in half.

2 jalapenos, seeded-and finely chopped

1/4 cup fresh cilantro (I like to mix all three) or 1/4 cup parsley (I like to mix all three) or 1/4 cup basil, finely chopped (I like to mix all three)

Directions:

Prep Time: 15 mins
1. In a large bowl, combine salad ingredients.

2. In a small bowl whisk together dressing ingredients.

3. Pour over the bean mixture and toss until all ingredients are coated.

DIRECTIONS
Print the box template onto lightweight cardstock, cut out along the solid lines, and assemble according to the directions found in the template file. Place your gift in the box, and use double-sided tape or glue dots to securely close the flap. Print bow tie/necktie templates, cut out, and trace onto your choice of patterned or solid colored paper. Cut out the tie(s) and attach to the box flap using double stick tape or glue dots. If making the bow tie box, punch out three 1/4 inch “buttons” using a hole punch, and attach to the front of the box using glue dots (small Zots are the perfect size).

Alternative directions: Assemble the box and attach the tie to the top flap first, and add your gift last.

2. Stir in sugar, eggs, butter and vanilla; mix well. Stir in flour, baking powder and salt until blended. Stir in mini-chips.

3. Drop level tablespoons 11/2 in. apart onto prepared baking sheets. Bake 10 minutes until cookies are puffed and set. Cool on baking sheet 2 minutes before removing to wire rack to cool completely.

1/2 cup butter or margarine, softened

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 teaspoon vanilla

1 egg

1 1/4 cups Gold Medal® all-purpose flour

1/2 teaspoon baking soda

1 bag (6 oz) semisweet chocolate chips (1 cup)

2 tablespoons butter or margarine

3 tablespoons milk

1 cup powdered sugar

1/2 cup pecan halves

1/2 cup candy-coated chocolate candies

1/4 cup shredded coconut, toasted, if desired

2 oz white chocolate baking bars (from 6-oz package), melted

DIRECTIONS
1 Heat oven to 350º F. In large bowl, mix 1/2 cup butter, the brown sugar, granulated sugar, vanilla and egg until well blended. Stir in flour and baking soda (dough will be stiff).

2 Pat dough in ungreased 12-inch pizza pan or into 12-inch round on ungreased cookie sheet. Bake about 15 minutes or until golden brown. Cool about 30 minutes.

3 In 2-quart saucepan, heat chocolate chips, 2 tablespoons butter and milk over low heat, stirring occasionally, just until chocolate is melted; remove from heat. Stir in powdered sugar. Beat with wire whisk until smooth, glossy and spreadable. (If not glossy, stir in a few drops hot water).

4 Spread chocolate mixture over baked layer. Immediately sprinkle with pecans, candies and coconut; press lightly. Drizzle with melted baking bars. Let stand until set. Remove from pan if desired. Cut into wedges.

Barbeque Sauce Recipes

HONEY BARBECUE SAUCE

A flavorful barbecue sauce for grilled chicken pieces.


Ingredients:

•1/4 cup lemon juice

•2 teaspoons grated lemon peel

•1 teaspoon dry mustard

•1/2 teaspoon salt

•dash pepper

•2 tablespoons honey

•2 tablespoons soy sauce

•1/2 cup vegetable oil

Preparation:

Combine all ingredients and let stand for 1 hour before using. Baste broiled or grilled chicken. Makes about 1 cup.

•1 c. strong black coffee

•1 c. Worcestershire sauce

•1 c. ketchup

•1/4 c. minced hot chili peppers

•6 cloves garlic, minced

Preparation:

Combine all ingredients in a saucepan and simmer 25 minutes. Strain or puree in a blender or food processor. Refrigerate between uses.

FOUR BEAN SALAD

Four bean salad is nutrient-rich and delicious.Beans are a barbecue staple, perhaps because they go with so many types of grilled fixings. The vinegar and sugar in Four Bean Salad make this side dish simultaneously tart and sweet. But it's sweet for a reason. For a healthier or drier version of this salad, you can easily adapt the recipe by using less sugar, vinegar or salad oil. If you do so, consider replacing some of the lost flavor by sprinkling in some of your favorite spices; rosemary, oregano and thyme work well. The four beans included make up the substance of this side dish, and they're packed with nutrients we all need for optimal health: dietary fiber, protein, magnesium, thiamin and much more. Serve it with a slotted spoon, as it sits in a pool of dressing.
Ingredients:
•1 can green beans, drained

•1 can wax beans, drained

•1 can dark kidney beans, drained

•1 can garbanzo beans, drained

•1 small purple onion, sliced thin

•1 green bell pepper, sliced

Dressing:
•1/3 cup vinegar

•1/2 cup salad oil

•2/3 cup sugar

•salt and pepper to taste

Put all ingredients into a bowl and set aside. In another bowl, combine dressing ingredients and mix well. Drizzle over contents of other bowl and mix well. Let it sit in the refrigerator overnight. Serve the next day.



Grilled BBQ Potato Skins Recipe

Ingredients

3 russet potatoes, scrubbed

4 slices cooked bacon, crumbled

2 tablespoons butter, melted

1 clove garlic, minced

3/4 cup Cheddar

1/2 cup barbecue sauce, warm

1/2 pound pulled pork

Sour cream, for topping

2 tablespoons snipped chives, for garnish

Directions
Preheat oven to 350 degrees F.

Bake potatoes on middle rack until fork tender, about 1 hour. Remove from oven and let sit until cool enough to handle.

Bake 4 strips of bacon on a small sheet pan in the oven for 15 minutes. Crumble bacon when it's cooled.

Preheat grill to medium heat.

Cut potatoes in half, lengthwise, and spoon out the flesh, leaving a half inch shell.
Melt the butter in saucepan and add minced garlic. Brush potatoes with the butter and garlic mixture. Flip over and butter the bottoms.
Place potatoes on grill and cook until crisp, about 4 to 4 1/2 minutes on each side and remove from grill.

Divide the cheese, barbecue sauce and pulled pork among the potatoes. Top potato skins with sour cream, crumbled bacon and chives for garnish.

Directions
1.Preheat grill to medium-high heat. Toss chicken and vegetables with barbecue sauce. Let stand 5 min. to marinate. Poke holes evenly in bottom of 13x9-inch disposable foil roasting pan with a fork or skewer. Place chicken and vegetables in pan. Place pan on grill; cover grill with lid.

2.Grill chicken and vegetables in pan 20 min. or until chicken is cooked through and vegetables are crisp-tender, stirring occasionally.

3.Spoon mixture evenly onto tortillas; top with cheese, salsa and sour cream. Roll up.

That's it! Sometimes I put cheese or nuts on a fruit salad to mix things up a little, but this fruit was just so good on it's own, I didn't feel like it needed anything else.

PICNIC POTATO SALAD

INGREDIENTS
2 lbs new small red potatoes

3/4 cup extra virgin olive oil

3 tablespoons red wine vinegar (see note)

1/4 cup red onion, sliced

1 shallot or green onion, minced

3 cloves garlic, finely minced

1/4 teaspoon each of fresh basil and oregano, minced

salt and pepper, to taste

2 tablespoons fresh parsley

1/2 green pepper, cut into thin strips

DIRECTIONS
Because this potato salad contains no mayonnaise, it's a safe bet for your next picnic or cook-out for those long hot Summer days. Be sure to taste and season well.

Scrub potatoes, removing eyes and discarding any green ones. Add 1 teaspoon salt to a medium saucepan of boiling water; gently lower potatoes into water and cook, with skins on until fork tender. Rinse briefly under cold water. Cut into quarters and return to hot pan. Add olive oil and remaining ingredients.

Stir for one minute over medium heat. Set aside to cool.

May be served warm or cold.

Note: 1 tablespoon of balsamic vinegar and 2 tablespoons red wine vinegar may be substituted for the 3 tablespoons wine vinegar for a more piquant blend. Add the garlic to the vinegar and let it sit for 30 minutes before preparation to help take the "edge" off.
