Giada De Laurentiis: Chicken Milanese with tomato and Fennel sauce recipe

When my daughters saw Giada De Laurentiis make this during her cooking show... They wanted me to make it!  So, i went to work... We skipped the "fancy" sauce (as they referred to it) and made the chicken part.  The whole family thought it was amazing! Perfect for a "kid friendly" dinner.  Enjoy

INGREDIENTS:


1/3 cup all-purpose flour
2 eggs, beaten
1 1/4 cups plain bread crumbs
2/3 cup grated Parmesan
2 teaspoons dried basil
1 teaspoon dried thyme
4 (6 to 8-ounce) boneless and skinless chicken breasts, tenderloins removed
Kosher salt and freshly ground black pepper
1/3 cup vegetable oil

SAUCE

1 tablespoon olive oil
2 fennel bulbs, trimmed and thinly sliced
2 1/2 cups (12 ounces) cherry tomatoes, halved
1/4 teaspoon kosher salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1 clove garlic, minced
1 teaspoon dried thyme or 1 tablespoon chopped fresh thyme leaves
1/2 cup mascarpone cheese, at room temperature

For the chicken: Put an oven rack in the center of the oven. Preheat the oven to 150 degrees F. Line a baking sheet with a wire rack.

Using 3 wide shallow bowls, add the flour to 1, the eggs to another and to the third bowl combine the bread crumbs, Parmesan cheese, basil, and thyme.

On a work surface, put the chicken between 2 pieces of plastic wrap. Using a meat mallet, lightly pound the chicken until approximately 1/4 to 1/2-inch thick. Season the chicken with salt and pepper. Dredge the chicken pieces in the flour to coat lightly, then dip into the beaten eggs, allowing the excess egg to drip off. Coat the chicken with the bread crumb mixture, pressing gently to adhere.

In a large, nonstick saute pan, heat the vegetable oil over medium heat. Add 2 pieces of the breaded chicken into the oil and cook until light golden brown, about 3 to 4 minutes on each side. Transfer the chicken to the prepared baking sheet and keep warm in the oven. Repeat with the remaining chicken. Reserve the cooking juices in the saute pan.

For the sauce: Using the same saute pan, add the olive oil to the reserved cooking juices and heat over medium heat. Add the fennel and cook, stirring frequently, until softened, about 5 to 6 minutes. Stir in the cherry tomatoes, 1/4 teaspoon salt, 1/4 teaspoon pepper, garlic and thyme. Cook for 5 to 6 minutes until the tomatoes are tender. Remove the pan from the heat. Add the mascarpone cheese and stir until the mixture is creamy. Season with salt and pepper, to taste.

Transfer the chicken to a serving platter and spoon the sauce over the top before serving.

Movie Night

With the girls home from school for Febuary vacation, planned activities are a must!  It's nice to hang out in P.J's and not go anywhere, but it is also nice to have a bit of structure.  I found free "Movie Night" templates to cut and color at the link below.  When they are finished have the kids tuck them away until the special night/day. Before the movie, plan everything out.
1. Decide on a special treat.  Buy or bake together!
2. Take a Vote... Which movie? Kids can get really into this.  Use posterboard, stickers etc... Make a chart.
3.  Head to video store.
4.  Have the kids dress up like their favorite character in the movie.  If they haven't seen it, just glance at cover and use that as a guide.
5.  Enjoy!  And remember, sometimes its easy to do "other" things such as cleaning or making phone calls, when your kids are actually sitting still... I am guilty of that.  But it is so nice to stop and enjoy it with them. They'll appreciate it more than you'll know!

EASY POPCORN BALLS

INGREDIENTS                                                
3/4 cup light corn syrup                                      

1/4 cup butter

2 teaspoons cold water

2 5/8 cups confectioners' sugar

1 cup marshmallows

5 quarts plain popped popcorn

1 teaspoon vanilla

DIRECTIONS

1.In a saucepan over medium heat, combine the corn syrup, butter, cold water, confectioners' sugar, cinnamon and marshmallows. Heat and stir until the mixture comes to a boil. Carefully combine the hot mixture with the popcorn. Stir to evenly coat.

2.Grease hands with butter and quickly shape the coated popcorn into balls before they cool.

Apple Cinnamon Granola Bread Recipe

Course : Bread Machine

Ingredients:

Amount Measure Ingredient -- Preparation Method

***1-1/2 LB LOAF***

1 cup water

1/2 cup unsweetened applesauce

1 tablespoon butter

3/4 teaspoon salt

2 1/4 cups whole wheat flour

1 1/4 cups bread flour

3/4 cup granola

1/3 cup nonfat dry milk powder

4 teaspoons brown sugar

3/4 teaspoon cinnamon

1 1/2 teaspoons bread machine yeast

Preparation:

Add ingredients in order given by manufacturer, adding applesauce with water and granola with flours. Adjust dough if needed. Whole wheat/grain cycle or basic/white bread cycle. Light color setting. NOTE 1: If using white bread cycle, add 1 tbls gluten to either size loaf to improve loaf height, texture and structure. NOTE 2: For large capacity machines with glass dome, make only a 1 lb loaf to ensure complete baking.

Cinnamon Raisin Bread

Preparation:

Add ingredients into the pan in the order listed, select white bread and push start. If we are home, we add the raisins at the beep, beep, beep point near the end of the second mixing as the tend to remain whole. Sometimes, we add them at the beginning so they are nice and fine. Try it both ways.

Potato-Stamp Penguin

Cut a large and a small potato in half lengthwise. Paint the large potato half black and then stamp it on blue craft paper. Paint wings on black body and let dry. When dry, paint small potato half white and then stamp it on the black penguin body. Cut a beak and feet out of orange craft paper and glue on penguin. Add wiggly eyes. Make an ice landscape with torn craft paper, tissue paper, or cotton balls.

Fingerprint Penguin

Stamp thumb into white paint and make one large thumbprint tummy on a piece of blue paper or cardstock. Next, stamp index finger into black paint and make fingerprint wings on either side of the tummy. Then, stamp tip of pinkie finger into the black paint and make a fingertip head on top of the penguin. Use a toothpick to make two white eye dots. Allow to dry. Finally, use the toothpick to add a beak and feet with orange paint.

Penguin Egg Walk

Explain that emperor penguins have to carry their eggs and babies on their feet. This is not an easy task. Have children take off their shoes and try to walk around with an egg on their feet. (Make an egg out of a white sock filled with rice or cut a big egg out of white paper.)

Have children create snow penguin sculptures and paint with snow paints. (Mix food coloring and water and fill small containers with the mixture.) Children will enjoy exploring the effects that the paint makes on the snow.

Granola Recipes

Make Your Own Granola

GRANOLA BASE

3 cups of old-fashioned rolled oats

3 tbsp brown sugar

1 tbsp salt

½ tsp cinnamon (you can add more or less, depending on what you like)

1/3 cup honey (you could also use maple syrup, if that's what's on hand)

1/3 cup canola oil

1 tsp vanilla

*Preheat the oven to 325 degrees. Prepare a large cookie sheet with non-stick spray and set it aside.

*Mix the dry ingredients together in a large bowl. Mix the remaining liquid ingredients in a glass measuring cup. Heat the liquid mixture for one minute and stir its contents, then pour over the dry ingredients and mix thoroughly. Thinly and evenly spread the granola on the baking sheet. Pop the pan in the oven and set the timer for 20 minutes, or until the granola is a light golden brown.

*Enhance the base granola after baking by mixing in different combinations of dried fruits, nuts or seeds:

TROPICAL GRANOLA

¼ cup macadamia nuts

½ cup dried pineapple

¼ cup flaked coconut (sweetened or unsweetened)

½ cup dried papaya

½ cup banana chips

HARVEST BLEND

1 cup dried apples

½ cup halved walnuts

¼ cup pumpkin seeds (salted and roasted)

1/8 tsp. nutmeg

½ cup dried cranberries

FRUITY GRANOLA

½ cup dried apple chips

½ cup banana chips

½ cup dried papaya

½ cup raisins

½ cup dates

CHEWY GRANOLA BARS

2 cups of quick oatmeal

¾ cup wheat germ

2/3 cup brown sugar

½ cup honey

2 tsp. vanilla

½ tsp. Kosher salt

4 tbsp. butter

*Brown the oatmeal and wheat germ in a large, dry frying pan on medium heat. In a separate pan, combine the remaining ingredients and bring to a boil. Remove from stove and mix with the dry ingredients.

*Once the dry and liquid ingredients are mixed, stir in your favorite mix-ins, including chocolate chips or dried fruit.

*Spray the bottom of an 11x13 pan with non-stick baking spray, or line with wax paper. Firmly press the mixture into a glass-pan, as if you’re making Rice Krispie treats. Let cool at room temperature. After three hours, cut into bar-shaped treats, package in wax paper or snack-size bags and store in an air-tight container.

THE SWEETEST VALENTINE'S CARD:

This homemade Valentine card is simply sweet to put together. Put some sugar (or salt) in a plastic sandwich bag with a few drops of red food coloring. Using white or pink cardstock, draw a heart shape, fill it in with thin glue, then pour the colored sugar over it. Allow the glue to dry and tap lightly to shake off the excess. If you're feeling especially creative, experiment with using more than one color. Make the red colored heart on pink cardstock and when completely dry, add a thin line of glue around the heart and sprinkle with white sugar to outline it.

*Since the card will have to be handled gently after applying the sugar, complete the inside and any writing on the front of the card first.
                                                                                           


STRIKE UP A CONVERSATION:

Doesn't everyone love conversation hearts? Here's a way to share them with your Valentine without worrying about diets or dental bills. Using a paper punch you can purchase at any craft store or online, cut out small heart shapes in various bright colors. Carefully write appropriate sayings on each heart to convey a personal message meant for your Valentine alone. Fold a piece of cardstock and glue the paper conversation hearts to the front of the card in random fashion, or arrange the hearts to look like the petals of a flower, or in the shape of a heart.



HEART OF MANY COLORS:

One of my favorite coloring activities as a kid was to color a paper with every bright crayon in the box, then cover it with black crayon that you could etch into to reveal the colors underneath. Bring back this simple, time-tested craft in a similar manner for Valentine's Day. Cut out a heart shape then color it completely with a psychedelic look of several random bright colors, everything except red. Take a dark red crayon and cover the other colors, pressing hard to get a thick layer. With a dull pencil or orange stick, carve your own initials and those of your Valentine, or some other appropriate sentiment.

What about the inside of the card? If you're at a loss for words, use someone else's! There are many free sites where you can copy romantic phrases or short poems that are appropriate for the mood of the day. One site with a large number to choose from is PoemsForFree.com. If you have nice handwriting, make it personal by penning it yourself; otherwise, type the phrase and print out in a pretty font befitting the occasion.

Chicken Divan

For an easy Valentine's night dinner for your family, why not try this?   Pair with one of Pillsbury's Simply Italian breads (so easy to bake in oven, tastes great too) and a salad of your choice! Sunday's paper, Feb.13, 2011, will include a coupon for Pillsbury Simply bread if you haven't already tried it...

This version of the classic creamy chicken dish will be as welcome as the original!
Serves: 4
Ingredients:
3 cups frozen cut broccoli, thawed

1/2 cups (8 ounces) diced cooked chicken breast

1 (10 3/4-ounce) can Healthy Request Cream of Chicken Soup

1/3 cup skim milk

1 teaspoon dried onion flakes

1 teaspoon dried parsley flakes

1/2 cup + 1 tablespoon (2 1/4 ounces) shredded Kraft reduced-fat Cheddar cheese

Directions:
Preheat oven to 375 degrees. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray.

Evenly arrange broccoli in prepared baking dish. Sprinkle chicken evenly over broccoli.

In a small bowl, combine chicken soup, skim milk, onion flakes, and parsley flakes.

Spread soup mixture evenly over chicken. Evenly sprinkle Cheddar cheese over top. Bake for 30 to 35 minutes.

Place baking dish on a wire rack and let set for 5 minutes. Divide into 4 servings.

Tips: 1. Thaw broccoli by placing in a colander and rinsing under hot water. 2. If preferred, a 10-ounce package frozen broccoli spears, thawed, may be substituted for cut broccoli. 3. If you don't have leftovers, purchase a chunk of cooked chicken breast from your local deli.

Oreo Kisses

1 package oreo cookies (divided… use cookie including the cream center)

1 8oz. package cream cheese (softened)

chocolate bark



1. Finely crush all but seven cookies in a food processor or place them in a ziploc bag and crush into a fine consistency.

2. Stir in softened cream cheese. Use the back of a large spoon to help mash the two together.

3. Roll the mixture into 1″ balls and place on wax paper covered cookie sheet.

4. Then, begin to form the shape of a kiss. Flattening the bottom and forming a point at the top. (Mine ended up about 1.5″ tall)

5. It helps to put the uncoated balls in the freezer for a few minutes to keep the mixture from starting to fall apart when you drop into the melted chocolate.

6. Melt chocolate as directed on package and then dip “kisses” one at a time into chocolate, tap off extra and slide them off spoon onto wax paper covered cookie sheet to dry.

7. Once dry, refrigerate and enjoy! Oh yeah, just eat the extra seven cookies.

Decorate:

1. Handwrite your messages or create them on the computer. Cut out the strips (about 1/4″ tall and however wide you need).

2. Cut up some square sheets of aluminum foil (about 5.5″ square)

3. Place dry kiss in center and start wrapping the foil around the base. Insert message near top and secure it by pressing the foil together at top.

Valentine games

Looking for some Valentine Fun?  Here are 3 games to play with your children or students!

Pin The Heart on Cupid - Buy a large piece of poster board. Draw a picture of cupid on the poster board using online clip-art pictures as a visual guide. Hang the poster board on the wall being sure to have the intended heart location at hand height for the kids. Have each child make a red heart out of construction paper or give them each a red heart that you make. Put double sided sticky tape or a adhesive glue dot on the back of the hearts. To play, blindfold each child, give them a spin around and have them pin the heart on Cupid. The child that gets closest to the intended location of Cupid's heart wins.

Valentine Memory Game - Purchase one or two bags of those cute little Valentine conversation hearts that carry messages like 'Love Ya'. Prior to starting the game, pour the candies out and go through them to find pairs of hearts that are identical (same color and same saying). When you are ready to play the game, lay all the pairs of hearts face down (saying down) on the table or other flat surface. Have the kids gather round the game area and explain that the goal is to find pairs of hearts that have them same saying and color (show them an example so they understand the goal). Go around the circle having each child taking a turn by flipping over two hearts. If they are lucky and smart enough to get a pair, they get to take another turn until they miss. When they miss, the hearts get flipped back over (face down). Kids with a good memory can remember where the missed hearts were to create their own pairs. The kid with the most pairs when all of the hearts are matched wins the game.

Steal my heart - This is a fun, laugh out loud game for kids who are old enough to have some hand-eye coordination. Simply purchase a couple large bags of Valentine candy conversation hearts. Place them in a large bowl at the center of the classroom or kitchen table. Have the kids take a spot around the table being sure that it isn't too crowded. Give each child a set of chopsticks telling them the goal is to 'steal' as many hearts from the big bowl of candy as possible. You can either give them individual small bowls to store their stolen hearts or tell them to make a pile right in front of them. Be sure to emphasize that they can only use the chopsticks - NO HANDS. Say go and time for 3 minutes yelling out stop. The child with the most hearts in their bowl or in front of them when time runs out wins the Valentine prize.

1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
2 packages (3 oz each) cream cheese, softened

1/2cup miniature semisweet chocolate chips
1/4cup caramel topping
DIRECTIONS


1.  Unroll dough into 2 long rectangles. Press 1 rectangle in bottom and 1/2 inch up sides of greased or sprayed 8-inch square (2-quart) glass baking dish; press perforations to seal.
2.  In small bowl, beat cream cheese and sugar until smooth. Add egg; beat on low speed just until mixed. Fold in chocolate chips; spread over crust. Top with remaining rectangle of dough. Press out to edges of dish; pinch edges to seal with bottom crust. Drizzle with caramel topping.
3.  Bake at 375°F 18 to 22 minutes or until golden brown. Cool 1 hour on cooling rack. Cut into 3 rows by 3 rows to make 9 bars. Cut each bar diagonally into 2 triangles. Store covered in refrigerator.

1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk

2 large egg yolks

1 container (8 oz.) frozen whipped topping, thawed, divided

1 container (6 oz.) or 1 1/3 cups fresh raspberries, divided

1 (6 oz.) prepared 9-inch chocolate crumb crust

Directions

WHISK together evaporated milk and egg yolks in medium saucepan. Heat over medium-low heat, stirring constantly, until mixture is very hot and thickens slightly; do not boil. Remove from heat; stir in morsels until completely melted and mixture is smooth. Pour into large bowl. Refrigerate for 30 minutes until cool. Gently stir in 2 cups whipped topping.

REFRIGERATE for 2 hours until thickened. Sprinkle 1 cup raspberries over crust. Spoon chilled chocolate mousse over raspberries. Dollop remaining 1 cup whipped topping on center of pie; top with remaining raspberries.

2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels

1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk

1 teaspoon vanilla extract

3 cups miniature marshmallows

1 1/2 cups coarsely chopped walnuts

Directions

LINE 13 x 9-inch baking pan with foil; grease lightly.

MICROWAVE morsels and sweetened condensed milk in large, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in vanilla extract. Fold in marshmallows and nuts.

PRESS mixture into prepared baking pan. Refrigerate until ready to serve. Lift from pan; remove foil. Cut into pieces.

1/4 cup (1/2 stick) butter

2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels

1 jar (7 oz.) marshmallow crème

6 cups oven-toasted rice cereal

24 bite-size peanut butter-filled chocolates

1/2 cup NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels

1 teaspoon vegetable shortening

Directions

LINE 24 muffin cups with paper liners.

MELT butter in a large, heavy-duty saucepan over low heat. Add semi-sweet morsels and marshmallow crème; stir until chocolate is melted and mixture is smooth. Remove from heat. Add cereal and stir until evenly coated. Press a heaping tablespoonful of cereal mixture into each prepared muffin cup. Press a bite-size chocolate into cereal mixture. Press a second heaping tablespoonful of cereal mixture over chocolate.

COMBINE butterscotch morsels and vegetable shortening in heavy-duty plastic bag. Microwave on MEDIUM-HIGH (70%) power for 30 seconds; knead. Microwave at additional 10- to 15-second intervals, kneading until smooth. Cut tiny corner from bag; squeeze to drizzle over tops. Refrigerate until firm, about 1 hour. Store in sealed container.

Whole Foods and Trader Joe's

 Whole foods and Trader Joe's are two of my favorite places to shop.  Trader Joe's has the best prices and I love to buy the kids snacks there.  Some of my favorites to buy are their Turkey Meatballs, Kettle Corn, Fig Newton bars (usually only 1.69 a box)!, and their organic frozen/fresh vegetables are so inexpensive.  A bag of organic apples only costs us about 2.49!!! We bring a cooler, drive about an hour and stock up...
     We go to Whole Foods for lunch often.  The buffet is also inexpensive and the kids have a ton of Healthy choices.  I shop the store armed with the coupons from their website below:

Cornbread and Chili recipes

Sweet cornbread and chili recipe

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2/3 cup white sugar
  • 1 teaspoon salt
  • 3 1/2 teaspoons baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup vegetable oil

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
  2. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.
  3. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the oaf comes out clean.

Directions
  1. Heat the oil in a 4-quart saucepan over medium-high heat. Add the turkey, onion, chili powder, cumin, oregano, black pepper, and garlic powder. Cook until the turkey is well browned, stirring often to separate meat.
  2. Stir the stock, salsa, sugar, beans, and corn in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 30 minutes or until the mixture is hot and bubbling.
