Southern Apple Crumble

Filling

3 large apples, peeled, coarsely chopped (about 3 cups)

1/2 cup granulated sugar

1/4 cup packed brown sugar

1 to 2 teaspoons ground cinnamon

1/4 cup cold butter or margarine, cut into small pieces

Topping

1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix

1/2 cup butter or margarine, melted

1/2 cup chopped pecans

1. Heat oven to 300°F. Spray bottom and sides of 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, toss filling ingredients. Spread mixture in baking dish.


2. In same large bowl, stir cookie mix and melted butter until crumbly. Sprinkle over filling.

3. Bake 40 minutes. Remove from oven; sprinkle with pecans. Bake 15 to 20 minutes longer or until topping is golden brown. Serve warm or at room temperature.

Smoothie recipes

Blueberry Frozen Yogurt Smoothie

Ingredients:
1 cup blueberries, fresh or frozen
1 cup vanilla frozen yogurt
½ cup milk
Blend all ingredients together for approximately 30 seconds, or until you reach your desired consistency.
TIP: For a smoother and thinner smoothie, add an additional ½ cup of milk and blend an additional 10 seconds. Repeat this step until you reach your desired thickness

Strawberry Frozen Yogurt Smoothie

Ingredients:
1 cup vanilla frozen yogurt
1 cup fresh strawberries
Dash of cinnamon
1 cup ice
Cut up strawberries and add to blender. Add remaining ingredients to the blender and blend on high for 30 seconds, or until you’ve reached your desired consistency.

Orange-Pineapple Smoothie

1 cup orange juice
2 cups pineapple chunks packed in their own juice, drained
1 banana
1/4 cup skim milk
2 Tbsp. honey
4-5 ice cubes
Place all ingredients in a blender and purée until smooth.

1 banana, 1/2 cup vanilla yogurt, dash of milk

1 mango (cut and pitted), 1/4 cup orange juice

1/2 cup strawberries, 1/4 cup blueberries, 1/4 cup raspberries, ¼ cup of milk

Strawberry Ice
1 cup strawberries, 1 cup orange juice, I cup crushed ice

Honey Melon
1 cup chopped honey dew lemon pieces, 1/4 cup apple juice, tablespoon honey.

Banana Boost
1 banana, 1/4 shredded wheat cereal (or other high fiber cereal), 1/4 cup milk. A great way to get extra fiber and vitamins into your child's diet.

Banana Muffins

     Found a recipe which works well to bring in for your child's "class treat".  My four year old is in a preschool class that has a child who is dairy free.  Tried it and it came out tasting really good.  I find that if I replace the butter with applesauce it can get too mushy and taste different.  BUT...... if it is a small amount, such as 1/3 a cup, it all comes together.  I found it on one of my "Go to" recipe sites http://www.allrecipes.com/

Banana Muffins II Recipe

makes 12 muffins or 48 mini

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large bananas, mashed
  • 3/4 cup white sugar
  • 1 egg
  • 1/3 cup butter, melted    REPLACE WITH 1/3 CUP APPLESAUCE IF "DAIRY FREE" VERSION IS NEEDED

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
  2. Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
  3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.
